This study delves into the molecular interactions between milk proteins, primarily casein, and various coagulating agents, such as acids, to unravel the mechanisms driving the transformation from liquid milk to solid cheese. Through a series of controlled experiments, this work demonstrates the critical role of pH changes induced by acidic substances like lemon juice or vinegar in denaturing casein molecules, leading to their aggregation into curds. Additionally, it investigates the impact of different coagulation conditions, including temperature, acid concentration, and curd processing techniques, on the texture and flavor profiles of the resulting cheese. These findings not only shed light on the complex interplay of proteins and acids in cheese making but also provide valuable insights for both artisanal and industrial cheese producers seeking to optimize their products.
